Cupcake of the Week

Just one of my many kitchen related gifts from my class this year was this... It has some yummy sounding cupcakes!
Cupcakes I have never heard of.
Cupcakes I must make.
So I decided this summer Dylan and I would do cupcake of the week! We love to cook together, and this gives us some good mommy-Dylan time. Now I just have to figure out who to give our cupcakes to each week. We don't need 24 sitting around our house. And sadly, I through half of them away this week.
First up...S'Mores Cupcakes. Don't they look delicious!


First up, we need some graham cracker crumbs. I just used teddy grahams since we would also need those for the topping.

We also had to put chocolate in the cupcakes, just like a real S'more!

They were fun to make and really did taste like a S'More. And what I like about this cookbook is all the cupcake recipes start with a simple box mix. You just add things to make them different.


Our finished product... Dylan decorated the top of them.
Recipe
Cupcakes
1 box yellow cupcake mix--prepare mix as directed on the box
1 cup graham cracker crumbs
4 bars (1.55 oz. each) milk chocolate candy, finely chopped
Frosting
1 jar (7 oz) marshmallow cream
1/2 cup butter or margarine, softened
2 cups powdered sugar
1-2 t milk
Teddy grahams and chocolate bar for decorating
Heat oven to 375. Place cupcake liners in 24 muffin cups.
Make cupcakes as directed on box.
Fold in graham cracker crumbs and chocolate.
Divide batter evenly among 24 muffin cups.
Bake 20-24 minutes.
Cool.
Frosting--
Remove lid and foil seal from marshmallow creme. Microwave 15-20 seconds.
In large bowl beat marshmallow creme, butter, and powdered sugar until blended. Beat in enough milk to make frosting spreadable. Spread over cooled cupcakes. Decorate with teddy grahams and pieces of chocolate.


Some thoughts while making these...
Baking and cooking with Dylan is a lot more work now. As we were making these I caught myself wanting to tell him to stop, don't do that, just let me make them. As we were making them I was also having to tend to Saylor. She wanted to be held at the time. You can't blame her...she's 3 months old and she was sleepy. But at the same time, I can't stop what Dylan and I love to do because he has a sleepy sister. We have to deal with it. It takes a little longer, we make a bigger mess, and that mess stays in the kitchen for a few extra minutes. Saylor has to cry. I have to decide so many times...do I let Saylor lay in her crib or swing for a few minutes and let her cry so I can spend just a few more minutes with my little man or do I tend to her and make him wait. It is something I have to think about and do quite often. Something I am getting used to and dealing with. He has to understand that mommy can't be there every second of the day to do what he wants to do, and luckily he is SUPER at understanding that. And Saylor, she's not old enough to understand why she's is left alone for a few minutes. But she will survive, and I know that. Being a mommy to 2 is wonderful and I have been blessed with a super easy going, go with the flow little man and a good baby who also seems pretty easy going. So next week, Dylan and I will once again meet up in the kitchen and bake some cupcakes. It may be a little stressful for this momma (I think I will wait until Saylor's nap time though!!)
but it is so worth it.
And what should we make...peanut butter cupcakes with chocolate frosting or
chocolate chip cheesecake swirl cupcakes?

#3 I know exactly what you mean in the last part of your post. It's hard to split the time and I never know which to tend to first. It is a lot of fun having two, but very exhausting at the same time!
